30 Days of Nicecream – Days 7-12

Hey favorites , how’s it going today?

I think it’s important when we are in the kitchen to step back and remember that making food is a creative process. It’s supposed to be engaging. It’s supposed to be fun. It should draw out passion from you somewhere along the way, after all, it’s probably food to nourish you.

It’s almost sad in our society how much that has been lost. Lets make a movement. Lets bring it back. I want to hashtag something like #loveinthekitchen but I feel like that might be misconstrued. How about #intuitivecooking ?

Just a quick note before I continue to the Nicecream – I typically use almond milk in mine but feel free to make yours using whatever milk you most enjoy. Also, I use give or take 1/2 cup for most, but I always adjust depending on how frozen my bananas are or to get whatever texture I so desire!

Here’s days 7-12…
Day 7 – Blushing Peach
What words could describe something so elegant? This one is sweet but also has a slight fruity tang to it. Refreshing and light.

Ugh, peaches make me drool!

Ingredients

  • 1 large frozen banana
  • 1 cup frozen strawberries
  • ~1/2 cup almond milk
  • 1 large peach
  • Coconut shreds and hemp seeds for topping

Directions: Blend all ingredients except for a few slices of the peach, and the toppings. Put in a bowl, add toppings, viola!

Day 8 – Chocolate Mint

Isn’t she a marble masterpiece? I know some people prefer this combo in the winter season but for me, I’ll take chocolate and mint together anytime. Please note that I made each flavor of this in higher volume because my blender requires a certain amount of materials to do it’s job!

Ingredients

  • 3 large frozen bananas
  • 1 tsp chlorella
  • 1/4 tsp peppermint extract
  • 2 tbsp raw cacao powder
  • ~2/3 cup almond milk
  • Coconut shreds and cacao nibs for topping

Directions: Blend 1.5 frozen banana with 1/3 cup almond milk, chlorella, and peppermind extract. Put in a bowl. Blend remaining 1.5 frozen banana and 1/3 cup almond milk with the cacao powder. Add to bowl and marble marvelously with a spoon. Add toppings if desired.

Day 9 – Cinnamon Bun

My guilty pleasure for the longest time? Cinzeo. That warm gooey cinnamon yum yum with extra icing just because. No word of a lie you guys, I would sit alone at the mall and eat it in secrecy.

I still love the taste of a cinnamon bun, but nowadays I’ll skip all the refined flour and sugars by making my own creation, like this beauty. It has the added benefit of maca which is great for hormone balance, energy, and focus. I love the toppings on this one especially because they add healthy fats and protein!

Ingredients

  • 2 large frozen bananas
  • ~1/2 cup almond milk
  • 1 tsp maca
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon (or to taste)
  • Dash of ground flax seed, some hemp seeds, and walnuts for topping

Directions: Blend all ingredients except for toppings. Add toppings and enjoy!

Day 10 – Pina Colada

Hi, it’s me, just dreaming it’s still summer over here!

Did you know that adding healthy fats such as coconut oil or hemp seeds while eating high sugar meals (like nicecream) help to regulate blood sugar by slowing digestion? Other great options are flax and avocado! But with this recipe, stick with the coconut oil.

Ingredients:

  • 2 large frozen bananas
  • ~1/2 cup almond milk
  • 1/2 cup fresh or frozen pineapple
  • 1 tbsp coconut oil
  • Coconut shreds, pineapple, and hemp seeds for topping

Directions: Blend all ingredients except for the toppings. Add toppings and enjoy!

Day 11 – Cookies and Cream

Funfact: I was losing daylight on this one guys and I went outside to take this picture just for you.

This recipe is the most complicated one I have done yet, but trust me, it’s worth it. It is also slightly different because it serves TWO! And it might as well because you will either be forced to share or probably want seconds.

Ingredients

  • 4 large frozen bananas
  • ~ 1 cup almond milk
  • 8 “oreo style” cookies ( I used KinniToos Chocolate Vanilla Sandwhich)
  • 1/2 tsp vanilla extract
  • Cocoa nibs and coconut whipped cream for topping

Directions:

Blend two large bananas, 1/2 of almond milk, and 4 Oreo cookies. Put in the freezer and let set so that they will scoop ( and also stay separate from the vanilla part! )

Once set, remaining bananas, almond milk, and vanilla.

Put it into two small bowls (or one big one!). Add scoops of cookie infused Nicecream on top. Add cacao nibs and coconut whipped cream, or alternately any aerosol whipped cream of your choosing.

Day 12 – Pumpkin Pie

PUMPKIN PIE 😍 – Yes, I’m that girl! And there is no shame in my pumpkin loving game.

Ingredients

  • 2 large frozen bananas
  • 5 tbsp pure pumpkin purée
  • ~ 1/2 cup almond milk
  • 1 can full fat coconut milk, refrigerated
  • 1/2 tsp of vanilla extract
  • Dash of pumpkin spice
  • Hemp seeds and almond slivers for topping

Directions: Take 3 TBSP pumpkin purée, 1/2 tsp vanilla extract, and mix with the solid coconut cream from the can – if you are really savvy save the liquid remains for another recipe! Whisk together and set in the fridge (I made lots and let mine set overnight!).

Blend frozen bananas with almond milk, a dash of pumpkin spice, and remaining 2 tbsp of pumpkin purée. Add to a bowl and top with pumpkin whipped cream, hemp seeds, and almond slivers.

Thank you guys SO MUCH for reading! It was too hard to pick a favorite, but since my boyfriend enjoyed the cookies and cream one so much I can imagine of all these options that is the one I will make again.
