Warm Winter Salad

Something great happened today (besides the recipe, but don’t worry I’ll get to that too).

We finally bought a dining room table today! Since we moved in September, Matthew and I have been living without. That’s been especially difficult because I love sitting down and being present to enjoy a meal. Hard to do without a table!

I love that our place is really coming together. It’s the first place I’ve ever had that I have decorated with my significant other. Actually, he has the knack for decorating (believe it or not!), I just help.

I also just realized what an adult I am now. Yes. Much adulting.

Let’s move on now shall we?

Warm Winter Salad

Ughh this salad! If you haven’t noticed yet, I love easy. This salad is crunchy and satisfying, yet warm and inviting. You gotta try it.

Ingredients 

  • 2 cups shredded brussel sprouts*
  • 1 cup carrot ribbons*
  • 1/4 cup toasted walnuts
  • 1/4 cup dried cranberries
  • 1 TBSP Coconut oil

*I cheated and used pre-shredded brussel sprouts – but this really cuts down the prep time! I also used a carrot peeler to create the ribbons. 

Directions:

In a small pan, warm tbsp of coconut oil. When melted, add the brussel sprouts – cook on light to medium heat until warm and softened, which for me was about 6 minutes. For the last minute, add the carrot ribbons.

Plate the brussel sprout/ carrot mix and top with the walnuts and cranberries. Maybe I went overboard, but I simply love those toppings!

Add whatever dressing you like – I highly suggest a balsamic vinaigrette, but I went with a balsamic reduction because I wanted that deep balsamic flavor.

Stunning! I didn’t know food could be so stunning until I found the magic in making it.

Brussel sprouts are high in fiber and vitamin C, which is a great antioxidant. Plus you get another antioxidant hit from the Vitamin A in the carrots and the vitamin E in the cranberries. When buying dried cranberries, try to find the ‘no sugar added’ ones, or the ones sweetened with apple juice – I find they are plenty sweet enough!

Vitamins A,C, and E are all very powerful antioxidants – and antioxidants protect you against free radical damage. In our society we are exposed to so many free radicals, so we want our antioxidants and we want them in abundance!

The walnuts are high in healthy fats, which are great for your brain.
