Sweet Breakfast Pizza

From a food perspective, I have grown so much this past year. It’s never anything I expected.

In fact, I think it has simply been a by-product of something greater: my journey of self love.

Food is such a huge part of that. I believe that what we eat reflects how we feel about ourselves. If we love ourselves, we want to nurture ourselves. And when we want to nurture ourselves, we feed ourselves delicious, nourishing food.

I never thought I would be one of those people who says “I love cooking”. But I became that person once I started using the kitchen as a creative outlet, and as a way of being kind to myself.

Of course, no one in my life seems to be complaining, as I’m also excellent at sharing.

I have to say in all honesty that this is my best creation of the year. I almost wish I had made it for company, because I’m confident this would wow a brunch crowd.

Do you guys want to come over for brunch sometime, and maybe help me eat some of this?

Without further adieu, the recipe…

First things first: the Pizza dough. If you want to make the pizza dough I used, check out this recipe by Martha Stewart – this is the one I used. I subbed the traditional all purpose flour for a gluten-free chickpea/potato flour combination which worked perfectly. I also want to mention that this recipe made a ton of dough – perfect for those who look forward to using the leftovers!

Please note that this dough takes time to set and prepare to plan ahead if you want to wow a crowd (or yourself) with these sweet pizzas!

Ingredients:

  • Your preferred Pizza Crust*
  • 3~ TBSP Cherry Jam – the more natural, the better
  • 2 Pears, sliced
  • 2 Nectarines, sliced
  • 1 TBSP Orange Zest
  • 1/2 TSP cinnamon
  • 1 TBSP Maple Syrup
  • A handful of hemp seeds and coconut flakes

*I highly recommend a homemade pizza crust – not only does it give this recipe a more rustic appeal, but then you are also sure to use one that contains no preservatives. Plus, you can use a flour that is gluten free, if you please

Directions:

Preheat the oven to 350f.

If using the same pizza dough recipe, prepare your pizza dough an hour in advance. Once it rises, knead gently and form pizzas – I made mine about the size of my hand. Place them on a gently oiled pan.

Once dough is prepared and ready to roll (errr, I mean, bake!) add pizza sauce – the cherry jam.I used a locally made jam that uses the most simple ingredients possible. 1 TBSP per pizza seemed to do the trick. Add cinnamon, pear slices, and nectarine slices. Sprinkle orange zest over top the pizzas and put in the oven to cook for 15-20 minutes.

Once the pizza crusts have started to brown, take them out of the oven. Drizzle the maple syrup lightly over top, and sprinkle them as liberally as you like with coconut flakes and hemp seeds.

I know I say this all the time – but I LOVE beautiful food! And these Sweet Breakfast Pizzas are gorgeous. I’m obsessed.

I have one more food-related call of duty this year, and that is to make Christmas dinner with Matthew’s mum (known to me as “Mama Rose”). Pray for me! I’ve never been in charge with making such a big elaborate meal. Thank goodness I had help!
