Ever get into a breakfast slump? I’d been feeling like that lately. When I have the time, I like to make a breakfast that is both beautiful and nourishing. I want to make something I can take my time to enjoy. Insert Sweet Potato Smoothie Bowl here!
This smoothie bowl is so tasty. It is totally fitting for the fall season. It also provides me with the healthy dose of carbs I need in the morning to get going! This post is going to be incredibly short because this recipe is really too easy!
What you’ll need:
- 1/2 a Sweet Potato (cooked)
- 1 Banana (Frozen)
- 1.5 cups almond Milk
- Pinch of cinnamon
- Pinch of nutmeg
- Cook sweet potato the night before; you will need at least one half for breakfast. Pro tip: cook six at once for easy food prep! Cool in the fridge overnight.
- In a food processor: mix 1/2 cooked sweet potato, 1 frozen banana, 1.5 cups of almond milk, cinnamon and nutmeg.
- Pour into a bowl and add your favorite toppers! I added blackberry chia pudding, hemp seeds, plain yogurt, and my homemade ginger snap granola on top. You could also try any kind of seeds or nuts, molasses, fresh fruit, or coconut.
