Edamame and Greens Salad

Confession time: I’m a salad fanatic. If I haven’t had my daily greens, or some sort of salad during the day, I feel a little lost. I love the crunch of a good salad, the textures! And if this makes me weird – so be it! I’ll be over here… being weird and enjoying my greens.

Although, I will admit, that having the exact same thing day in and day out is not really my thing. I love variety, so even though I eat a lot of salads, I always mix them up. Today, I’m adding this to my favourites list: Edamame and Greens Salad. It’s simple, easy, and fresh.

In the recipe below, I’m also gonna hook you up with a dressing that is absolutely fantastic – you’ll want to make extra!


Let’s put this together, shall we? This recipe makes two servings.

Ingredients 

Base:

  • 2 large handful of mixed greens
  • 2 large carrots (I spiralized mine)
  • 2 cups frozen organic edamame, in pods (I highly suggest organic)
  • 2 TBSP raw unshelled sunflower seeds
  • 1 avocado
  • 1 tsp sesame seeds

Tahini Ginger Dressing:

  • 2 tbsp avocado oil (or olive oil)
  • 1 tbsp tahini
  • 1 tsp rice vinegar
  • 1 tsp soy sauce (I used gluten free – suit to your preference!)
  • 1/2 tsp maple syrup
  • 1 tsp minced ginger

 

Directions: Assemble the dressing ingredients first and allow the flavours to mix while prepping the salad. For the salad, defrost your edamame in a bowl of warm water – this should only take about 5 minutes. In the meantime, add mixed greens, carrots (chopped, grated, or spiralized!), sunflower seeds, and avocado in equal portions to your plate. Add sesame seeds in equal portions.

Free the edamame beans from their pods – they should be unfrozen – if not, add more warm water and let them sit for a few. Once they are de-shelled and ready to go, add them to the salad. Top with the Ginger Tahini dressing and enjoy!

Is it just me or does spiralizing just add a little ‘something’ to this salad? If you don’t have one yet I recommend the one I use, which is by Starfrit – it’s the Starfrit Spiral Slicer . I have tried many other brands over the years, but this one is the easiest to use. It’s also the easiest to clean!
