30 Days of Nicecream – Days 16-18

I had an epiphany this week. I realized that I am slowly becoming the person I was always meant to be. I can feel myself growing into… myself. Authentically. I’ve never been so fulfilled.

I also realized something else: fancy, elaborate nicecream & smoothie bowls are not my thing. Some people are so extraordinary at it, and I’m happy to leave it to them. My heart is simple. My food, kinda practical. It’s an accurate reflection of me.

Here are Nicecream Bowls Days 16 – 19!

Day 16 – Red Bean &  Coconut 

I have always loved Asian food and it definitely influences me in the kitchen. So why not bring it to Nicecream?  This Nicecream was incredibly thick and creamy – like those dreamy milkshakes I used to enjoy!

Ingredients

  • 2 Large Frozen Bananas
  • ~1/2 cup Coconut Milk
  • 1/2 cup of Red Beans (Kidney Beans)
  • 1 TBSP Unsweetened, shredded coconut
  • Coconut chips for topping

Directions:Blend the first four ingredients and top with coconut chips. Enjoy!

Day 17 – Going Nuts (and seeds!) 

Isn’t everything better with peanut butter? This Nicecream is no exception. Fun fact – Peanuts are actually a legume. I know, it blew my mind too.

Ingredients

  • 2 Large Frozen Bananas
  • ~1/2 cup almond milk
  • 2 TBSP of Peanut Butter
  • 1 TBSP Coconut Oil
  • Almond slivers, walnuts, sunflower seeds, and chia seeds for topping.

Directions: Blend bananas, almond milk, coconut oil, and 1 TBSP of peanut butter . Top with remaining TBSP of peanut butter and nut and seeds topping.

Day 18 – Drop the Beet 


I had this the morning after Matthew’s Birthday dinner to help my gut repair. It has ginger, which is helpful in digestion. And beets! Which are full of antioxidants and also anti-inflammatory. Perfect for me after a naughty meal. And a great way to sneak in some beets!

Ingredients

  •  2 Large Frozen Banana
  • ~1/2 cup Almond Milk
  • 1/2 a Red Beet, Raw
  • Ginger, thumbnail size
  • Hemp seeds for topping

Directions:Blend all ingredients and add hemp seeds for topping. Enjoy!
