30 Days of Nicecream – Days 4-6

Hello all you lovely people!

My friend Kori asked me yesterday how school was going, and I told her that I hoped the experience would ‘catapult me to excellence’. She responded by telling me I was already there.

Kori is one of those people who is like, unwaveringly supportive. I could tell her I was having a bad day from not eating enough garlic, and she would probably say something so kind and sweet like “you know what, that’s not fair, you deserve all the garlic you want”. That’s just who she is.

Surrounding yourself with people who truly love you and want to see you happy is so important. Sometimes we need people to cheer for us. Sometimes we need to feel believed in, especially people like me who have whacky ideas and big dreams.

Good friends are so important.

And also, while I’m here, I should also remind you to surround yourself with good food.

That being said, here is days 4-6 of my 30 Days of Nicecream!
Day 4 – Cocoa Moko

The name might be a little fancy dancy, but this is essentially mocha nicecream. I love coffee and will never stop making coffee flavoured things. Made with, of course my favourite, salt spring island coffee.

Ingredients

  • 2 Large Frozen Bananas
  • ~1/4 cup almond milk
  • 1 tbsp raw cocoa powder
  • leftover coffee – 5 frozen cubes
  • Blackstrap molasses, walnuts, and cacao nibs

Directions: blend bananas, almond milk, cocoa powder, and ice cubed coffee until desired consistency is achieved. Top with blackstrap molasses, walnuts, and caocao nibs.
Day 5 – Peanut Butter Berry

The saying is kind of cheesy and overdone, but this nicecream really did make me feel like a kid again! Using powdered peanut butter instead of the regular stuff is great in smoothies because it blends through a lot better – watch out for added sugar though, as some brands do sweeten them up!

Ingredients

  • 2 large frozen bananas
  • ~1/4 cup almond milk
  • 3/4 cup frozen strawberries and blueberries
  • 2 tbsp powdered peanut butter
  • Fresh strawberries and a little extra powdered peanut butter

 

Directions: Blend bananas, almond milk, frozen berries, and powdered peanutbutter. Top with strawberries and an extra dash of powdered peanut butter on the top if you fancy it!
Day 6 – Cookie Dough

I should have named this one “the bomb dot com” cause really it is. I mean, it’s all beige and therefore not that fun to look at, but the taste is really out of this world. In making this, I managed to sneak in cookies for breakfast (muahaha!) but I would totally make this again for dessert. It is high in sugar, so I threw on some hemp seeds in hopes of slowing down the digestion so I don’t spike my blood sugar too much.

Ingredients

  • 2 large frozen bananas
  • ~1/4 cup of almond milk
  • 3 “Mary’s Gone Crackers” chocolate chip cookies (vegan)
  • 1/4 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 tsp hemp seeds

Directions: blend frozen bananas, almond milk, vanilla extract, almond extract, and 2 of the chocolate chip cookies until desired consistency is achieved. I chose “Mary’s Gone Cracker’s” cookies because they are a pretty clean cookie – they are also dairy free  (vegan!). Add the last cookie and hemp seeds on top!

If you don’t have any hemp seeds on hand, try throwing in some chia seeds, as those will also aid in helping to stabilize your blood sugar when eating this sweet treat!

My favorite from this bunch, and actually thus far, is the cookie dough… you guys have to try it! Let me know if you do!
